Reassign a meeting organizer after a domain move?

Exchange 2013...

So we're changing domains at work and are copying all the Meeting Room data from the old Exchange environment to the new one.  The meetings will come over into the Room Resource but the organizer will be listed as the User ID from the old domain.  This will mean that all our meetings will be orphaned and just sitting out there taking up space.

We want them to take up the space so people don't lose their rooms, but we need a way that they can still make changes to their meetings.

I know I can go in and manually delete the meeting if someone needs to change it, but is there a way that I can go in from the Exchange Server side and change the organizer of these meetings manually to assign them to the User ID on the new domain so they can manage their meetings on their own?

I'm open to doing this via Powershell, the GUI, or anything else if it's possible.
