What services should be monitored in Exchange 2010?

Hi,

I would like to know which critical services should be monitored in Exchange 2010 servers? Which services will required immediat attention from administrator? Also which one have to be monitored but not critical, I mean that can wait 24h for investigation without avoiding Exchange to run.
